Moffat Falls Pty Ltd is a soil carbon project located at Ebor, approximately 80km east of Armidale in the Northern Tablelands of New South Wales. Registered in February 2021, the project covers roughly 645 hectares adjacent to the New England National Park. The property operates as a regenerative pastoral station and is a well-known destination for fly fishing and eco-tourism.

The project operates under the 2021 Soil Carbon methodology (Measurement and Models), which incentivizes landholders to adopt new management practices that sequester carbon in agricultural soils. Standard requirements for this methodology involve establishing a baseline of soil organic carbon levels and implementing eligible activities such as altering stocking rates or applying nutrients. Moffat Falls specifically employs holistic grazing management and time-controlled grazing strategies alongside the application of compost and minerals to correct soil deficiencies.

The Ebor region is characterized by its high altitude and significant precipitation, often receiving up to 2000mm of rainfall annually. The area features fertile red basalt soils, creating ideal conditions for high-performance cattle grazing and carbon sequestration. The project is led by Lorraine Gordon, a prominent figure in the Australian regenerative agriculture sector and Director of the Regenerative Agriculture Alliance at Southern Cross University. Consequently, the property serves as a demonstration site for regenerative farming principles and "Carbon Plus" beef production.
